Wayne started his culinary journey at the age of 15 when he moved to Melbourne, Australia. From that young age, he began learning traditional Taiwanese home cooking from his mother. At 25, he had the opportunity to learn authentic Sicilian home cooking from an elderly Italian woman. With 30 years of cooking experience, he has built a strong foundation in both Western and Asian cuisine.
MMDCOOK was founded in 2016 and has welcomed travellers from all over the world every year. After the end of COVID, although tourism has not yet returned to pre-pandemic levels, there has been a growing number of guests seeking in-depth or customized cooking classes. In response, this new course is designed specifically for travellers who want a systematic way to learn Taiwanese cuisine. There are two menu options, and the course covers essential sauces, general principles and foundation of sauce blending, modern & fundamental cooking techniques, meat marination methods. After completing the course, participants will see significant improvement in their cooking skills—not just in Asian cuisine but also in other style of cooking.
